1. The Water Test
Sprinkle a teaspoon of atta on the surface of a glass full of water. Pure atta will float for some time before slowly sinking. If it sinks immediately or dissolves rapidly leaving a muddy residue, it might contain chalk powder or other heavy impurities.
2. The Dough Elasticity Test
Knead a small amount of dough. Pure wheat atta has natural gluten which gives it elasticity. If the dough feels overly stiff or cracks easily when stretched, it may be mixed with maida (refined flour) or lacks the natural bran content found in whole wheat.
3. The Taste and Smell
Pure atta has a distinct, sweet, earthy aroma of wheat. Adulterated flour often smells neutral or slightly chalky. When made into rotis, pure atta rotis remain soft for longer, whereas those made from mixed flour tend to become chewy or hard quickly.
